The real reason in my opinion, yea its true that they look like any hunter but i think that capcom just dont want to waste more development time in making another different set of armor for wyverians since they have different feet, hands, and pointy ears (most helmet need to redesign to fit their ears), not only that male and female armors have different designs so in total they need to make 4 sets of armor.
In the case of the twins though there's a bit of a dumber/more comedic reason. Based on a conversation you can have with Hinoa, she and Minoto did actually apply to be hunters and as seen in Rampages, they're really strong.
Problem was, Hinoa gets hungry way too fast and she burns through the supplies quickly. As for Minoto, she's apparently a shut-in and can't stray too far away from Hinoa.
but other than that, they are very long-lived right? And it's not like your player dies of old age so... technically you are already a wyverian. A secret wyverian
You just have to believe
Humans usually are hunters because of the extremely high dangers of being a hunter, and humans having much shorter lifespans than Wyvernians. Wyvernians, due to their age, can see out massive research projects for a few hundred years, which can help with finding new information from the Ancient civilization, or observe monster behaviors.
