It's gonna feel slow and clunky at first but once you get the hang of it feels great and the new Switch Skills give you lots of mobility.
It only has 3 basic combo from triangle button which is very straightforward but in order to get the most out of those 3 combos is to charge it (especially the final combo tcs which does the heaviest damage) and knowing when to charged it to the full or when to let it go early or cancel it into a tackle requires a lot of experience.
Great sword is good for a player like yourself whom has tried all of the weapons. There is a slight frustration in the beginning with GS mainly because youre consistently being knocked down. But once you learn the mechanics it becomes a breeze. My only advice is for any build just use your best judgement and dont rely on reddit posts etc. You will have more fun out of learning the game and being creative with your build. If you'll need help with mechanics then thats fine youtube has a good guide out there for mechanics, but other than that go nuts man.
You can get stunned through Tackle in this game if you keep hyper-armoring through attacks, so you have to either be careful about this, or slot in Stun Resistance.
Guard Tackle doesn't run into this issue since it's a normal block. The benefit of Guard Tackle is that it lets you do a full guard in the middle of a charge, vastly reducing any damage you would take from any (blockable) attack and, like Tackle, keeping your charge up. It's a lot slower, but it's also a lot safer.
Hunting Edge also isn't trash, it's just overly hard to use. The mount-damage value on it is pretty high, enough to grab mounts on non-target monsters in one activation, and the follow-up aerial slash is buffed. It takes 2 bugs (for some reason), but it has a fast cooldown, and GS isn't particularly reliant on wirebugs anyway.
Adamant Charge is generally the better option, especially for newer players, but don't count Hunting Edge out completely.
I agree with the Guard Tackle advice, as soon as I tried it out I've never had a reason to go back to regular Tackle. It's the same thing but you don't end up losing a third of your health for using it to tank monster attacks.
