I have the same Issue, and I'm pretty sure stems from a misconfiguration of the game.
The game is set up to allow for the "Launch in SteamVR" option only on windows.
That is at least what I gather from the page from SteamDB ( https://steamdb.info/app/1435790/config/ ).
A new launch option for Linux is currently not enabled
Forcing the Windows version of Escape Simulator by going to Properties -> Compatibility -> Force the use of a specific Steam Play compatibility tool causes the game to offer the SteamVR option on Linux and it seems to run just fine (well, I just checked quickly, didn't play a whole session).
Thanks for the info! It's a bit weird that it isn't documented anywhere that only Windows users get to play the VR version but luckily forcing the Windows version seems to work fine under Linux so that's still pretty cool :)
