EDIT: One person starts the game on their own computer/account as the host, other people join with their own steam accounts and computers and own copy of the game.
If you already own multiple copies of the game you don't have to use Family Sharing :-) You're free to play co-op with your family.
Although, if you're interested in using Family Sharing for Escape Simulator, it's fully compatible! You'll need to connect with your family members as "friends" first. Then, using the primary account that serves as the host for family sharing, add your family members. After setting Escape Simulator as a shared application, everything should be set up for use.
