Thanks for your question! Playing Escape Simulator alone is absolutely fine, and it's perfectly enjoyable solo. As for the DLC, each one is also fully playable on your own. :-)
Sure, Escape Simulator is more fun when playing with other people, simple because of a bit of positive chaos it provides in co-op, the game is designed from the ground up to be a great solo experience too :-)

just adding to what Iggy said - there are 30 Original levels, 3 free DLC levels and 12 paid DLC levels (and more to come). You can check out some singleplayer streams on YoutTube, if you want to see how it looks. There are also more than 4000 community made levels and in general they are mostly suitable for either singleplyer or multiplayer, but a small minority might require you to play with someone - those usually have that indicated in the title or description.
As for the DLC recommendations it really varies as players like different things. Perhaps you can first play a few Original levels and free DLCs and then you can share which ones you liked most, so people can perhaps advise you better on what to play next.
We also have a lovely Discord community which you can join (https://discord.gg/pine-studio-449578254433517578) and perhaps find someone to play with there. We have a co-op channel where you can just drop a message, asking if anyone has time to play.
