And thats PERFECT, the first movie is the real, genuine and original masterpiece, and the only one considered canon.
During the test we got to enjoy the Family Household, and The Slaughterhouse map, as well as Leatherface, Cook, and Hitchhiker for Family Side.
For Victims, we got to enjoy Connie, Ana, Sonny, and Leland.
The map we did not get to play was Gas Station, and the missing Family were Sissy and Johnny.
The missing Victim was the one who was slaughtered at the beginning of every match, Julie.
In the full game, whichever Victim is not selected for play is the one who gets Slaughtered in the intro.
Potentially there may also be more intro animations that can play based on the current Leatherface player's choice in loadout, but that is unconfirmed.
As you said, they have full creative liberty to make more maps, victims, and family members, as well as unique execution animations for each family member.
For the maps, it's also important to note that both maps in the test specified what time of day it was. For the Household, it was Dawn. For the Slaughterhouse it was Day. Potentially maps may have several variations, such as Household Day, Household Night, Slaughterhouse Dawn, Slaughterhouse Night, etc.

Same director and writer as the first film. I consider it canon. The characters and locations in that one would lend themselves to the game quite well too.
