The death of the penultimate human is mentioned in one of the in-game news articles. Have her as the second player's character and tweak the articles to reflect that when playing multiplayer. The character-select menu can just call them The Chef and The Cook. Mechanically, they'd be identical. Same stats, same hitbox, just different appearances (though probably similar builds). Upgrades would apply to both, so buy the first Cleaver Damage upgrade and both now do 2 points of damage. Maybe increase the prices a bit, given two players would be able to handle more customers at once. Probably best to make them both immune to traps and cleavers, so you don't have to worry about accidentally ruining the game by bad aim when ganging up on an enemy. If either dies, the run is over (you probably don't want the surviving player to have to continue on alone, after all).
