Here's a list of increasingly more spoiler-y hints. :)

1. The priest holes were built specifically as refuges for catholic priests. So perhaps looking for catholic symbolism might help?

2. It's not a cross (that would have been too obvious). There's a book that shows symbols of various religions.

3. The book is in the painting room. Check it out. :)

4. Have you seen any of the symbols in the book anywhere in the manor?

5. Have you checked the pantry?

6. There's a plaque featuring the Agnus Dei on a shelf at the back of the pantry.

Now, to actually _open_ the passage to the priest hole, you need to find at least two other clues and solve a puzzle. If you have questions about that, feel free to ask. :)

That is one of the two clues I meant. ;) When I was at that stage of the game, I spent some 10-15 minutes viewing the manor and any gate structures from all angles, checking if there was a year depicted somewhere. But that's not the case. The year is noted on the floor plan inside the house. Specifically, it's in the painting room, like the book about religious symbols.
