I put the seed in the pot and watered it so quickly that when I realized i should first crack it, I could not take it out of the pot.

There is no problem with watering the plant before it has cracked. The seed will wobble a bit (but not sprout) to indicate that something is missing, but nothing bad happens. Just proceed to crack the seed open and then grow the plant. You don't even need to water it again. I did it that way and it worked fine for me.
