So reload to the autosave/previous save and don't do it. That's why the game mentions about saving and creating multiple saves in the tutorial lol.
Though, iirc there is enough nutrients to feed all minds except 1. However, there is a mind that you can bypass feeding if you have a high enough leadership... so theoretically there is enough to feed all minds... but I could be wrong.
And fighting is for me - going to Elysah keep to restore essence, make creatures - go back to kill a few enemies - go back to the keep - go back to killing - etc. Not very fun to redo this.
This is a list/compendium of all items and their locations for original Geneforge 1 and not Mutagen. I couldn't find a list for Mutagen. (though I only spent ~10 minutes searching)

From my experience the Mind Nutrient locations are exactly the same(I used it to get a couple nutrients in Mutagen I had overlooked/missed), and you can bypass a specific one using Leadership. As for what the Servant Minds do... you'd have to find a guide for explicit details.
Off my head, there are ~2 minds that basically do nothing for you gameplay wise as they just give information. The others give more tangible benefits, such as the ability to disable traps/defenses in an area(s), unlock otherwise inaccessible doors to canisters/items, complete certain quests etc.
