The Walkers give defence buffs to nearby allies.
A lot of the time, Walkers die because waves aren't de-pushed expediently enough, and that's either due to poor map awareness, or enemies just being really clever with map control and putting pressure in the right places at the right times.
You're right about the pace of the game and soul farming, though, even the devs were aware of it to some degree, because they did in fact buff the HP of all Walkers. Perhaps not enough, but we'll have to see what they have planned.
