As for your questions here I can give a shot at providing some helpful information.
1) The game has an offline mode if you aren't connected to Steam servers or if you don't have an internet connection. You can play completely offline if you would like to. The default is to host a lobby so your friends can join seamlessly. If you want to stay solo without going fully offline, the best way to do that is to mark your lobby as friends only and set a password. When you're playing solo, you can pause as well, but you will unpause if someone joins you.
2) I'd definitely suggest paying attention to the receipt UI when you sell items if you're trying to maximize your profits. Different customers will have preferences for different items, and you can see important metrics like if they are low on patience and therefore decreasing the price they're willing to pay. If that is the case, you can improve your store layout to address it.
3) The progress bar for the outpost is an experimental feature we're still fine-tuning and improving. Because of that, it's only present on a few outposts around the starting area so far. This includes the Skull Coast Major Outpost, though, if you're looking to complete it. Other outposts, including all other major outposts, still reset, usually after about a day in game, but sometimes slightly longer. They just don't have the progress UI or completion bonus reward yet.
4) I won't give a ton of advice for improving sales so you can discover more on your own or other players can pitch in with their ideas, but definitely make sure you don't forget about your shop policies. You can assign a specialty item or category and get bonuses for selling items of that type, or (one of my favorite methods) turn on the silver tongue policy and mark up your items as high as you can by completing a mini-game to sell them.
