That depends a lot and i mean a lot

But most agree that the physical demi fiend is the best for a single reason: Pierce

Focus on Vitality in the beginning to get some bulk until you feel safe.

Put a point in Agility every time you hit a level that's a multiple of 5 (5-10-15-20-25...).

Don't put anything in Luck if you can put a point somewhere else.

Otherwise focus on STR if you make a physical build, or MAG if you make a magic build. A magic build is OP in the beginning but begins to show its limits after level 30. A physical build will enable you to deal gigantic amounts of damage in the late game. Demi Fiend has access to exclusive physical skills that are the strongest in the game.

Once you learn Focus keep it all game. Same for War Cry and Fog Breath. You can replace them later, but only if you have a very good reason.

All on strength and agility

you need atleast 25 strength to get the gaea magatama from mantra HQ, shouldn't need more than that, focus on agi and vit for a physical build otherwise.

24 but wouldn't worry about Gaea, terrible resistances, especially for Hell Biker who's pretty much immediately after you can get it, and only starts learning skills at like 62.

Personally for Phys demi fiend, 2 points of strength, 1 agility, 1 vitality was what I did. Stop at 30 though, due to the "Masakados" Magatama if you plan to collect every single one. +10 All Stats but luck but luck doesn't do anything anyway so you're fine.
