If I had to pick the next few courses added to the game, here's what I think would be cool.
-Atlantis (Fish swimming around you, treasure, sunken ships, submarines, underwater city)
-Tropical Beach (unlike tourist trap, tikis, palm trees, campfires)
-Jungle (tribal temples, thick dense trees, bugs everywhere, tree houses, ponds)

I think we need a Star Trek course. TNG style!

2 player mode for one Vr , so i can play with my girlfriend or friends who have no vr, or we must play oneplayer mode
Pass and play should support any number of players, not just two.
I could see a Jurassic Park/dinosaur theme working with the easy course just touring the park and the hard course being after the dinos escape and are destroying the park.

Seems like everyone and their sister is doing crossover events with TMNT these days.

Amusement park or fair. I could see some interesting holes making use of different ride systems like carousels, ferris wheels, and roller coasters.

Seabase, although that might depend on the upcoming DLC and how much that taps into 20,000 leagues under the sea.

Horror themed hotel with different rooms representing different horror tropes. Could be good for a Halloween update.

Kaiju theme where the players are really big and playing through a miniature city. Hard mode could have rampaging monsters fighting each other and leaving destruction in their wake.
A computer theme would be neat. You are a tiny ball/person playing through circuit boards, wires and fans. This could add a lot of moving parts like electrical or memory currents that you have to wait for and time your way past or along with. Fans that spin and you have to hit your ball through. Areas that you have to avoid or be deleted and have to start over at the tee. Low res areas because the graphics card needs updating!

A miniature golf version of a famous course like pebble beach

A black and white course where you are inside of an old cartoon, like steamboat willie
An M.C. Escher inspired course where holes are on the walls and the ceiling and stuff

I said "inside of a submarine" back in april and that's what the 20,000 leagues courses looks like it'll be. What do I win?

I also said "In a rainforest with all sorts of animals" and El Dorado came out a month and a half later and it's set in a rainforest. (Although there's not a lot of animals.)

I also said "An M.C. Escher inspired course where holes are on the walls and the ceiling and stuff" and hole #17 on the Labyrinth is exactly that!

I think some kind of steam punk world would be neat, possibly with minor elements the player can interact with to change elements of the course. Like levers that shift chutes as the ball is rolling down, or a cup that feeds into a turret you have to control and shoot your ball roughly in the right direction, but it's a timed event. I dunno, legit I kind of wish this game could eventually have a level editor but have my doubts that will ever happen. As per a cross over, if these guys ever get in with nintendo (I know, fat chance) imagine a quirky mario themed minigolf course lol.
Lord of The Rings Style would be great.
Maybe they do what a certain Pinball game on here did and theme courses to certain games..

A course like that old board game "Mouse Trap".
I don't care what it is, just make it something where you can enjoy being there. Something positive, but not infantile, nothing "cute" or "sweet". Palm beach and such. The first course is good, and I also love Gardens of Babylon.
Something which combines a palm beach or that Garden with futuristic stuff, like Halo themed, would've been awesome, and the 2001-era shading for shiny surfaces would work well on Quest 2.
I'd also love to see something humorous, just make it so older gamers can enjoy it. I like the additional elements in The Labirynth, but it's not my cup of tea.

And since the graphics style is so blocky, how about Alone in The Dark 1 from 1992 themed course? ;)
Or Another World themed.
(Those are vector based and flat polygon based graphics, so that's why I suggest them. The "8bit pixelated" style is overused and boring, I beg you to not do those)

Having some add-ons like playing with bombs (balls with a rope, the classic look from old oldchool toons) would've been great. Hit the ball before it explodes. Or play while other bombs are falling around and you should get rid of them every now and then before getting back to your golf gameplay. Or maybe use those bombs to destroy bridges etc. to open up special paths for Albatros/Eagle scores on the hole.

But anyway. Sunny beaches. Don't forget the sunny beaches. :)
Can we please get a BTTF course? Using the different eras of Hill Valley Town Square, modern and future dressings for easy and hard is just super obvious. We already had a wild west level so the third old west dressing could probably be omitted. After seeing Labyrinth, I could totally see this happening for another movie like this one.
Probably already been suggested but a HONEY I SHRUNK THE GOLF BALL like course, where we are tiny and amidst nature at its finest,, :)
Half life style or imagine a H3VR course.... could do some fun stuff with that.
