Hunting for the butcher, should I skin the carcasses?
Is an intact carcass worth more than the sum of it's parts if I plan on selling everything, or should I skin them and sell them in pieces?

It's worth more if you sell the whole animal. For instance, a 3-star deer is worth $7. If you skin it, you can sell the hide for $2.25 and carcass for $3.50, so $5.75 total.

You'll make less and with more effort. Skinning animals is only useful when you need a specific part for daily challenges, etc..

What CC said unless you need the room on your horse for a bigger/better kill.

That's a good point about storing hides to save space for better animals. One time, I think I stored like 20 or 30 hides on one horse for fun, then my game crashed 😭🤣
