Lost Sheep Bug(?)

Anyone having issues with the lost sheep quest?

After the first dream with the wolves I lost a single sheep and they broke my fences and in the morning I had to go find them. Before I started the dream I had 6 sheep but after the game is saying I had 7 but only 6 have been found. I finished the quest to find the Ram so it's not related to that. Is this a bug or do I need to keep progressing and find the mysterious 7th sheep?

There are 7 sheep in the first group of sheep you are sent to find. Sometimes one wanders away from the rest if you don't find and get them by the third day, but it will still be on the map somewhere. The quest only requires 6 of the 7, which is why your quest completed but the sign still knows there is another sheep out there in the wild.

If you look at your cow sign you will see it says 2 cows even tho Willow is your only cow at the time. There is another cow on another island you will find later. The Chicken coup also registers that there are more wild chickens to find. 3 more will come onto your main island after the first week or so, and some more will be found over a bridge requiring nails. So not a bug and you are not seeing things - consider the numbers a hint. :)
