You don't need to constantly be upgrading equipment either, you only really need to do it from one rarity to another or sometimes skip a rarity as the stat increases are most of the time rather minuscule, plus different sets have different skills attached that may not mesh with your play style. There's no need to equip all all of them only the main 4 characters that you use as the support characters don't gain anything from equipment you only use their skills so give them weapons that you want the skills of like shield bash or stun shot to stun opponents.
For characters levels you'll most likely be using the same 4 characters for most of the game, so providing you do all the side quest they'll keep up with the level curve. The only time I turned to grinding was after I beat the game and need to get 4 more levels to reach 50 for the last achievement, which took about 10 missions and a total of 15 minutes give or take.
If you want to grind for money that is also best left for the very last chapter as the amount of money you get from a mission increases drastically from less than 1k during chapter 1 to over 30k in the last chapter, so doing it early is a waste of time.
