When I started out, I tried the popularity mixing of low and high games to increase profits. I ultimately based it mainly on how many goals I'd achieved on each game--that usually corresponded with the popularity/profit closely enough.
But as I expanded, I didn't want to try to keep up with 35 games on that PDA, and frankly I realized it didn't matter anymore as I was making money hand over fist.
Purely from an RP management point of view, I'd love to see an interactive/hyperlinked list/chart of all the games put on the desktop PC based on the previous day's (or week's) popularity--just to make it easier to see everything at a glance.
Out on the arcade floor, I eventually just went with my own themes and what worked for me based on looks or practicality. I also tried to avoid what, in my mind, would cause clashing audio themes for gamers. So Zombat 2 is not right against Fruit Crush or Woodgal's Adventures for example.
Because I couldn't swap out Meteor Madness, I made Retro Corner:

Opposite of Retro Corner, I have Woodguy/Woodgal Lane.

The pillar which used to be the starting line for the detested laundry machines, now houses my personal small-cabinet favorites--UFO assault is on the backside. Line Terror, which I like to play (with the sound muted), unfortunately drew the short straw for slots. So it's just back there to fill the wall space.

Then the backroom holds the rest of the games. My main goal here was to give everyone as much space as possible. But, I liked having the look of the smaller white cabinets sitting together.
There's nothing in the slots next to the pool table. Having played a lot of pool in my life, it looked like it was very tight quarters and would likely be difficult to hit various shots with people hunched over cabinets that were placed so close to the table.
Also, I'd give a lot of money to move that dart board. it drives me crazy that you'd have people chunking darts about a foot away from some poor, unsuspecting, dancing gamer all while trying to avoid anyone using the middle cabinets and the walkway they create.

I'd probably just leave older arcades in the back and move the newer ones I'd get up front, and wouldn't care about popularity, either.
