quite a few games you can just zip up the folder and plonk it on another computer and they'll run quite happily; used to be a big list somewhere
most devs and pubs do use steam's drm though

All these platforms word their terms differently, but functionally they all work the same way - you get a license that they can take back at any moment.
The only difference with GOG is that they have a policy of not bundling their games with DRMs, that's it. If they take away your license (which is what they provide, again, like every other platform) and you continue playing, you'd be in as much trouble as you would on any other platform. And clearly for this game being on GOG wouldn't change anything, the dev has expressed no interest in either updating the game or adding DRM.
(But despite your explanation I still like GOGs DRM-philosophy more and like to support the underdog^^.)
