There's also no in-game ledger.
I've resorted to screenshots, spreadsheets, and a notepad to act as my ledger.
The best option is of course simply to explore more so you have more sources to draw from and it becomes less of a hit-and-miss affair.
But not having a ledger summary that lists current inventory of all businesses is very intentional, because you don't know what they're going to have when you get there. Other businesses produce and consume their stuff at their own rates, and also AIs can steal from them or buy/sell with them. (And that's why it might be worthwhile to pay them to become a "tied house" and only deal with you, and not other AIs)
