anyway to instruct a mob member to buy what I need for a certain booze type but stop buying that product if the storage of the production building reachs a certain number?

Only indirecty/inefficiently: At the storage waypoint, use the "Until" option to set your maximum storage for this item.

Your crew member will now never drop off more than you want to have in your storage. He will, however, continue to buy until his car is full and then contintue to cruise the city with a full car, until storage falls below the set maximum.

isnt this until option like "until the car storage has that amount?" is there an until option in the building?

If I remember correctly: Yes, when dropping the "drop until" option refers to the building. To refer to the car storage, you would use something like "drop but" (don't remember the exact phrase).

Yeah, when you are buying something you have the option to buy until the vehicle has [x], but not until [y] building has [x]. then when you drop things off, you have drop of until building has [x].
So, what might be best to do is drop off until building has [x] combined with buy until building has [y], so you can do that for multiple ingredients if you have a pickup or delivery truck.
would really like it if they would improve on this to make delivery routes easier

One thing I do that works well enough is to add a step. I always have one property serving as storage. Drop off until X at a production location, and then drop off everything that's left at storage. Fortunately, the auto system will skip the storage step if your vehicle is empty. This means your gangster will have an empty truck for the next part of the schedule and can buy a full load of the desired goods. If you don't do this, your gangster will just have a full truck and will drive around uselessly doing nothing for you.

Eventually, you should be able to tweak the delivery to stop buying anything as you'll have a good stock at storage in your territory, and you can use that instead of buying. Assuming you had enough sellers to build up an excess.

Just remember though, that having a gun in your truck means that it will NEVER be considered empty, so you won't skip a step. I consider this an oversight.

Honestly the delivery system could really use more automation, with "don't buy this unless we actually need some" being the primary one I long for.

The absence of this particularly makes advanced tier alcohols often more trouble than they're worth, as they often need really heavy goods where you can't just workaround with "drop off until [x], buy until [x]" holding excess on the trucks unless you can dedicate a whole fleet of people to one booze operation.

This, 100%. We need programmatic rules for the automation. My real gin producer doesn't need any more herbs. I can control that manually as a human, but I really need to be able to put that as a rule for my Booze Procurement automation chain. It would make perfect sense in context - why would I send a gangster to buy herbs if I have 60 units of them!?
