Your crew member will now never drop off more than you want to have in your storage. He will, however, continue to buy until his car is full and then contintue to cruise the city with a full car, until storage falls below the set maximum.
So, what might be best to do is drop off until building has [x] combined with buy until building has [y], so you can do that for multiple ingredients if you have a pickup or delivery truck.
would really like it if they would improve on this to make delivery routes easier
Eventually, you should be able to tweak the delivery to stop buying anything as you'll have a good stock at storage in your territory, and you can use that instead of buying. Assuming you had enough sellers to build up an excess.
Just remember though, that having a gun in your truck means that it will NEVER be considered empty, so you won't skip a step. I consider this an oversight.
The absence of this particularly makes advanced tier alcohols often more trouble than they're worth, as they often need really heavy goods where you can't just workaround with "drop off until [x], buy until [x]" holding excess on the trucks unless you can dedicate a whole fleet of people to one booze operation.
