To answer your questions:
1. Yes - and we're still tuning the exact number of turns, but in any case it's going to be many hundreds of turns per session. (And then of course you can re-roll and start a new procgen city.)
2. When you explicitly agree to do stuff for someone, that shows up on a list (like a quest). But all the different things people buy and sell don't get their own list, because that would be too big - instead you can use overlays to filter them on the map.
3. The demo is time-limited to 50 turns, so there's a whole bunch of stuff that you just don't get to: specifically higher level opportunities (and threats) that only show up once you have a larger outfit or more territory. For example, in the demo you don't typically run into other gangs unless you go out of your way, because there's not enough time.

I'm really enjoying it!
The turns number is a my "obsession" since Civilization IV. Anything less than 500 turns is "short" for me.
About the "reminders", yes, I discovered them. Yesterday, I was dismissing dialogues before accepting because I wrongly assumed a negative end when lacking the requirements. Today I appreciated so much the ability of a splitted delivery!
One thing that I found strange: I was in a regular shop, trying to buy lumber and the shopkeeper refused to sell anything because there was the police. I can understand it in case of illegal trades but for legal goods?
I'm really impressed by the vastness of the map and the details and the gameplay mechanics: hired my first crew member, obtained 2 trucks, started some autmations...
About automations... A more agile planner will be useful, for example just clicking on a building and be allowed to use the map with the overlays active.
Definitely wishlisted.
Is there any plans to make an unlimited demo available before the release? Very unfortunate there is a turn limit on it. Been following this game for a few years now, didnt even know there was a beta.
You get a good feel for the game in 50 turns.
Well it's a demo, not a freeware. So what do you expect? That they should just give you a free product? They could of cause, if you have bought the product, give a extension on the turn limit. However I don't think they do that.
Hmm, I met 2 gangs, both of which I killed their leader and got all their stuff. :)
Before that, one of the gangs managed to take down my "front", which was my cousins shop. It was odd I wasn't able to talk to him about it, but had to open a new "front" across the street. My cars almost broke and I didnt have the skills to repair my trucks. What if I don't make it in time?
Nice demo though. Waiting for release :)
Suggestions:
- when zoomed out you should still be able to click the smaller icons to open shops etc. to start conversations, I had to always zoom in until the icons get bigger for the click to work
- when creating delivery routes it would be cool if a filter for the selected resource is automatically applied to the map and clicking a shop on the map selects it in my delivery-route-step
- once a route is created it would be nice if the map shows the actual route, so far it only shows the connection from my safehouse to each shop separately
That's the scope of a demo. To give you a feel. A demo has to be limited in some way. This is not unusual.
Are you sure it was gangs you met and not just street hooligans? Gang areas are displayed with red, hooligans are displayed as Yellow/Orange.
