As for the main character, I'd suggest you to pick 2 or 3 characters as your main characters. My experience tells me that one main character is not enough, especially when you want to revenge but your main character is countered by your opponent's character. It's very likely that you will want to switch character in situations like Leo vs Millia or Chaos vs Nago. Mastering all these characters is mentally stressing and not recommended.
And have a look on the other characters that you don't play as main, you'll need to know how those characters work at least, understanding the basics of those characters will help you fighting them.
You'll learn what other characters do by playing against them and labbing stuff against them.

-do the tutorial to become familiar with the game's systems
-pick a character I think looks cool
-learn a few bnbs off of prominent buttons/from different situations (eg counter hit state)
-watch high level players that play that character and see what they do/check dustloop for science (hitboxes/frame data, etc)
-lab out match ups
in between all that, just play other ppl. playing other ppl is the most important since neutral is still a thing, plus player tendencies. strive's replay system is really good, so even if you get destroyed by ppl better than you, you can easily check the replay and then lab out the situations that ♥♥♥♥♥♥ you.
and most of all, enjoy the process of getting better and learning
Unlike smash and MVS 2d fighters tend to have more complex characters so the decision to learn more than one is up to you. I will say that typically unless you're a pro you won't have time to get good at more than one character. HOWEVER learning other characters does help you lab against them if you aren't willing to play long sets against people to learn.
YOU should play whoever you think looks cool.
Learn your buttons and a simple bnb combo to get started.
Add other mechanics to your arsenal as you get better.
You will lose a lot but those losses will help you grow.
Never play against CPUS in fighting games, they cheat and teach you bad habits.
