It either got hungry and untamed or it got hit with a stray arrow or something and untamed. But as long as there wasn't a corpse you can find it again! You can find them wandering with the rest of the wild animals at oasis.

according to a dev post, when a camel wanders off it drops all its resources, but there's no warning whatsoever and this mechanic is a huge deal breaker for me. I'm done with this game.
