If you have no experience in it, imo, you don't really have grounds to complain. A lot of people complain just to complain here, and you can't go by that and base that on your reason to not play the game. If you wanna buy it and try it, then do it but if you are basing your choice on whether to buy the game based on people complaining about hunger and thirst in a survival game, then you really shouldn't even be complaining yourself, it's already apparent that the game won't be for you.
Skill wise farming is planned. I believe magic was coming next in a month or so, archery in 3? They had some Q&A stream about it but I missed it, so I only caught glimpses of what people have posted about it. All the other current skills cap at 50, so more will be planned for them later as well.
This is very early where early access goes, but you could still get your money's worth out of playing the game for what it currently has. If you don't want to wait for updates, could purchase one of the other similar games that are already complete in this genre.
The game has some interesting skills - but the gameplay is going to need to get a LOT deeper before we can get skills like Herblore, Dungeoneering, and even something as simple as Fishing. As it is, all the water sources in the game are about waist deep and primarily serve as an impediment in combat.
As someone that leveled Runecrafting to max in Runescape, I'd personally love a more in-depth Runecrafting experience, but I'm not holding my breath that the system gets any deeper, especially when it's so integral for exploration and reducing tedium in resource harvesting.
