Running isn't an option to avoid combat
Kinda crazy considering on OG Runescape you just needed a reasonable amount of run energy and not getting unlucky high hits/spells that snare you to avoid combat but in UE5 asset store starter pack you just barely run faster than the mobs and if there is a Green Arrow mob in there with hitscan or you don't have a lodestone 30 seconds away? gg no re

Then we do not play the same game,
I run away successfully 8 out of 10 times, getting away from war bands is the hardest bc they often approach from two directions
But that is if I avoid combat and flee, after initiating combat its harder to get away, bc your back is wide open. If you get a shield stun successfully that's the time to run if you need to. Rats and Kebbits are delightfully persistent thou

If you can't dodge/roll and run away you should probably try a different genre.
Run and roll

running is not the problem, stam is, this game expect you to fight 2-3 enemy's at the same time when your entire stam bar only is good for half of one enemy's HP bar

so running is actually the only good option you have, and use the terrain to your advantage to avoid the arrows that seemingly have heat seeking ability.
i can't say i die a lot BUT i sure as hell lose way to many time to avoid them annoying combat times. don't get me wrong fighting two goblins at the same time is sure as hell skill and i like the combat IF the stupid dragon or some hunting party does not enter the fray.

Crouching is.
Nah I agree with the OP, I've found even running full pelt in one direction, enemies lunge towards you with their hits so you NEVER avoid them unless you dodge, but then stamina is a ***** and the aggro range is crazy

Use special brews for reduse stamina consuption of dodging/sprinting then if struggle
so far the easiest ways to get around combat is running or if its a base invasion or your being hunted simply die next to your base and grab your stuff when they leave as soon as you die it resets them and they walk back from where they came and dragon attacks just TP away and then TP back and problem solved

I've ended up simply alt f4'ing my game whenever a warband starts and sometimes when a hunt starts if I cbf
The ranged attacks seemingly having radar locks is annoying if your trying to fight a few melee mobs at the same time but i didnt find stamina to be a major issue atleast not once i found out about brewing water and bones/fangs/antlers to make the X reduction drinks.

The most annoying thing for me really is how the game at current pretty much pigeon holes you into going sword/shield (i love ranged but i dont enjoy always doing the same "charge and release" attacks), the parry window is pretty huge so i found myself pretty much stun locking most of the melee mobs
