If you allow players to host the servers instead of you guys, you cut the costs of the servers, and it allows the people creating the servers the customization to allow them to make it a PvE server, PvP server, or possibly change some other settings and make nights shorter, increase loot, and all sorts of other customization options, allowing for more player interactions and fun moments.
