If you run in sprinting then they hear you.
Sneak in and pull a couple at a time. If you're using a bow only though you'll be at a slight disadvantage. Staves can stun a group of enemies for a short time, and melee can block/parry to stun.
Also you aren't limited to singleplayer, you're limiting yourself to singleplayer.
If you want to play online, just press continue on the Epic Games notification (or in your Settings), and it checks to see if you linked an account already. If not, it makes a dummy account for the sole purpose of this game. You do not have to go to Epic Games website, nor even download the launcher.
