How do I make the car handling better?
I have been struggling to make cars drivable at all. I have lowered the suspension, stiffened the sway, put on better grip tires, put on stronger brakes, and they still slide all over the place.

If I put on the brakes at 25 MPH, I skid all over like I am on ice. It is no fun driving cars at all.

The big vehicles' driving physics are so much better. What am I doing wrong?

Same actually, i bought a Porsche 911, decided to make it for racing, but it doesn't really handle that well, soo slippery and every turn at high speed makes me drift lol
Pay close attention to the upgrades. The default tires have better grip than the upgraded tires for example. You can also tune your torque to hp ratios with things like intake. If your torque is too high youll spin your tires and lose traction with too much accelleration. Wheel spacers can give you a wider contact with the road if you are tipping or rolling making you more stable at the expense of a wider turning radius. Suspension damping can help stay stable with bumps. Also parts have weight. If you put a heavy radiator in the front its going to affect you turning at high speeds etc. Not every upgrade helps you depending on what youre trying to do such as racing or offroading or pulling heavy loads. Also tge driving mode makes a big difference. Comfort gives you slower wider turning and accelleration compared to sport, drifting disables TCS etc.

Things can go crazy and more variables play rolls on complex layers as the car get more powerful engine. You have to understand the car well by start off with default set up and slowly experimenting each parts to see what changes.

For handling on my rule of thumb:
Reduce Understeer - Stiffer rear sway bar ,Softer/remove front sway bar, Stiffer rear suspension, Softer front suspension.
Reduce Oversteer - Softer/remove rear sway bar, Stiffer front sway bar, Softer rear suspension, Stiffer front suspension.

LSD also impact handling and performance
1 Way is the most stable but not good for performance
1.5 Way is the best performance but less stable when over the peak grip

Every car I drive except for the Lancia drifts like mad. Everything.

The 911 is infamous for snap oversteer due to the engine weight being behind the rear axle, so it sounds like it's working as intended.
Fortem is actually one of the better handling 2wd vehicles in the game due to the way the games physics work

You're not doing anything wrong, the physics on cars is totally off. Anybody that's ever driven a real vehicle knows this. Momentum is extremely exaggerated and grip/traction is way off. GTA has better car physics.

The only car I am bothering with is the Lancia right now. Everything else is overly exaggerated drift/slide-on-ice handling

No, it is not. I have been playing racing games for decades. This is by far the worst of them all for handling of the car. Everything loses control at any speed.

Porsche's are notorious for it slippery butt. It handles very different from any other car. Drive a Porsche like any RWD sports car and you will crash in the first corner.

Stiff suspension means when vehicle tips to one side, the other will not be touching the ground. Try going gradually, don't stiffen it up, install anti-roll bars, then increase the stiffness one step at a time, don't go straight to 400%.

When you upgrade brakes, you mean braking power? More % is not always better, it will just lock the wheels instantly when you press the brakes.

I play on a wheel so don’t know how applicable this is for controller or mouse&keyboard but initially I also felt the cars were handling pretty badly, then I turned off basically all of the assists. Traction control, ABS, rollover prevention and after that I actually feel like I can control the cars better. I went from having to go 40 in some turns on 90 roads to going almost 100 in those same turns. Might be a placebo but it honestly feels so much better now. ABS could probably stay on since that’s only for braking though.

It almost feels like they were assets just dropped into the game. I stopped playing bc you can't take a turn at 20 mph without spinning out.

They started with Synty assets but have been adding many of their own models for a while now. However, that’s completely unrelated to the discussion. The way a car mesh looks or where it came from is entirely irrelevant to how the car is programmed to drive or how the game's physics function.

Try lowering your "Keyboard/Gamepad Steering Speed" in the "Assist" settings; bigger trucks by default have slow turning speeds. Also (and this is assuming you aren't doing these things already), when you feel like you're losing control of the car, let off the gas and try not to over correct.
