In reality, when you lock differentials, you can hardly steer -> its a feature, not a bug. As i never mentioned it myself, you probably drive to fast for this. Locking differential is meant for slowly creep through mud / over steep hills.
Explanation: When you have an unlocked differential, both wheels turn at different speeds (the inside one slower) while cornering. Because you locked it, the wheels both move at the same speed and so a turn is very hard, since the inside wheel is fighting to move faster than it should for a turn. The only reason it turns at all with a locked diff is because both wheels are clawing at the ground as you keep them angled, dragging the truck to the side slowly. However, it's also trying to force the wheels straight at the same time, so your FFB is heavier.
Turn off the front axle lock while turning, and you should be fine.
