I think pitched battles might be best, try the battle of Bouvines (France vs. Holy Roman Empire)

Avoid Hastings like the plague! But Bouvines, TInchebrai and Steppes should be decent options assuming only the base game.

Yeah I mean Hastings took me god knows how many tries, and I already had several hundred hours in FoG 2 Ancients by that point.

Until you get used to not causing traffic jams with your knights it is probably best avoided and even then, I don't think I particularly enjoyed it from either side. Though that is more due to the nature of the battle itself than the scenario design.

I have all dlc. Any battles you'd recommend from that?

Assuming no preferences for time period, Benevento, Agincourt, Ankara, La Forbie, Bosworth and some of the early Reconquista ones like Monte Maggiore should be decent, from memory. Courtrai is quite a fun defensive battle as the Flemish but I probably wouldn't play as the French yet.
