Differences from Platinum version?

You can set any resolution you want by manually editing the Settings file in Platinum edition already. The only widescreen issues are stretched graphics in the main menu and a stretched camera view when riding a coaster. If even only the second issue is fixed, it will likely be enough to get me to buy this for a reasonable price.

It would be great if it could support 21:9 ultra-widescreen at 3440 x 1440. I'm sure those with 4K screens would be thrilled with that as well.
Considering 1080 ultrawide and 1440 ultrawide are only used by about 1% (each) of Steam users, and 4k is only used by 2%.. with 1080 users at 65%, I doubt they'll support the other resolutions unless the game is popular enough to fund the upgrade.

The original runs just fine on 1080p as it is, why is that a selling point?

It was explained in another post here. The platinum version was published by Atari, and this one is published by Frontier, the original developers. Atari lost rights to the game, so the Platinum version is no longer available for sale.

This version is basically the same thing, just money goes to the developer, not publisher

I agree. Seems to me this is just for new buyers. However I am curious if they have fixed the default water jets being a bit blurry even in 1080p.

I've been playing a lot of RCT3 platinum lately and the game does have some performance hiccups with gsync and I'd assume other modern hardware problems, and it sounds like they fixed some of them. Also I run platinum in 1440p and it works just fine minus the stretched on ride cam.

Edit: Also supporting more resolutions makes this a lot easier then manually changing a config file lol.
