It's actually less clunky than most of the PS2 games. Try replaying LWC and you'll see what I mean.
Part of the reason why it probably feels more clunky to you is that the thruster values (specifically thruster regen and on some units, thruster power) by default are underwhelming compared to most of the PS2 and more recent games, despite actually being more Universal Century accurate (with some notable exceptions).
With respect to turning and walk speed, there are custom parts that actually make the units more responsive than previous games. I highly suggest you use High Spec Cruise Control and potentially Field Motors if you want better responsiveness. (GM Command + High Spec Cruise Control actually moves faster than the Command in 0081, for example). The differences between 125, 130, and 135 move speed are tremendous.
Alternatively, the use of Forced/Regular Cooling Systems is a very good use of option part slots. These improve the handling of a 90/95 move speed MS such as the Cannon (short boost, cool, short boost), where high spec cruise control doesn't really give that much benefit. 100 move speed or lower is going to generally be extremely painful to control without using boost to control direction. 105+ you can get away without using it, but it does help immensely if you know how.
Some units such as the GM Cannon/Cannon II line are a bit less accurate (almost all are supports) when compared to their equivalents in the series, mostly for balance reasons. The Cannon II would be an absolute menace if it moved at the same speed as it did in 0083, for example.
