So you can move an existing blueprint into any folder by using the 'open folder' button to bring up the OS directories and drag (or cut & paste) the file containing the blueprint you want to move from the top level main blueprint directory into the desired subdirectory.
Similarly you can move blueprints between folders by moving their file from one subdirectory to another.
And DSP simply reflects what exists in the file system; so it's safe to create, rename, or delete directories to reorganize the in-game folders. Its also safe to to rename the blueprint files, which will change their filename (and sort order) within the game.
It's a bit clunky that you can't do much of this organization from within the game itself; but at least it gives you a shortcut to the blueprint directory; making it easy to do through the OS.
