List of rare veins for achievement?
Which veins do I need to avoid to get the achievement? I know you can get fire ice from ice giants, but I'm not clear about what other veins need to be avoided or are safe to collect from.

Any in yellow thats a VEIN. Anything in yellow thats NOT in a vein doesn't break it. So Fire Ice from Ice giants, Oil from wells and sulphur from oceans are fine to use.

A vein is very specifically the mineral outcroppings on a planet that you could collect using a miner (or advanced miner).

Anything you get from an ice giant, ocean, or while harvesting plant life doesn't count against you for the collect no rares from a vein achievements.

So:
Mining fire ice from a planet voids the achievement; collecting it from an ice giant doesn't.
Mining organic crustal from a planet voids the achievement; collecting it from plants/trees or creating it in a chemical plant does not.
Mining fractal silicon, kimberlite ore, optical grating crystal, spiniform stalagmite crystal, or unipolar magnets voids the achievement

Wait... so I've been avoiding tapping my sulfur ocean for no reason? lol. Thanks, this makes a lot of sense but I wanted to clarify.

Yep. lol.
Go ahead and start pumping that oceanic sulfuric acid -- it won't affect the achievement a bit; and it'll let you tear down your existing chemical planet production line for it.

(But don't feel bad - when I was first going for this, before we'd worked out exactly what the achievement triggers were, I not only avoided pumping sulfuric acid I also avoided gas giant deuterium and ice giant fire ice -- all while tripling up achievement runs by doing it in a 0.5x resource run without using any foundations. Guess I was really a glutton for punishment :D)
