When you first select them the cursor will have a little 'A' next to it. That indicates that you're selecting the source from which the sorter will pull. After the source has been selected that'll change to a little 'B'; indicating you're now selected the destination the sorter will supply.
So to move material from a belt into a building:
1) Ensure the belt is within 3 grid lines of the building (maximum sorter reach).
2) Select sorter from the build menu
3) Click on the belt (the letter by the mouse cursor should switch to 'B')
4) Click on the building (destination)
The sorter should now be able to move material from the belt into the building. (Note: for factory buildings it will only move material that their currently assigned recipe requires)
To move material from buildings to the belt you would just click in the opposite order; after selecting sorter click the building first to make it the source then click the belt to make it the destination.
(Note 2: if they're within range it is also possible to use a sorter to move material directly between buildings)
I recommend watching YouTube tutorial or letsplay and see what they are doing and what you are missing.
Nilaus is a hack. He survives on being one of the only streamers making this kind of content and he's decent at the game. But imo he comes off really condescending and he's so scatter brained he cant explain one concept or build well enough to teach anything despite making hundreds of tutorials. if you want to just stamp down his blueprints and not actually play the game understanding why the layout works. go nuts. he does make good designs. i just take issue with his inability to explain what he's doing without getting distracted every 10 seconds and never getting back to anything he was talking about before the distraction and I find that incredibly irritating to deal with in what is labelled a guide/tutorial. it's really difficult to watch him if you actually want to learn. but thats just my opinion. Quoted OP had his.
/endrant - Look up Francis John, he's much better and recently started making DSP content. I'd recommend him any day.
In detail, you have a conveyor belt reach a building, then place a sorter by clicking from the place you want to get items from TO the place you want the items to go.
For example, when building a sorter, if you want items to enter a smelter, you place the sorter by clicking on conveyor belt first, then click on the smelter. If you want items to get out of a smelter, you do it by clicking the smelter first then the conveyor belt.
