sorters have a habit of putting in up to 5 cycles worth of materials into machines or power plants, that way it doesn't completely empty the belt and allows for more than one machine

A single miner with a couple nodes can easily satisfy several Thermals at once, so chances are your belt is stopped simply because the Thermals are already full (and working). Note that sorters only ever fill up machines to a number of items requires to 5 operations. So, i.e., 5 coal for a Thermal. This is by design to make the more common setups more efficient (aka, if you feed many machines at once, all of them take only what they need, instead of the first in line hogging all resources it can't even process right away).
No the Thermals are not working, they deplete the resources then stops and my base is out of power. I then manually have to go to one of the grinder take the stack of 50 and put it manually in the thermal power plant.
1) is the thermal generator the only source of power you are using? if so use wind turbines to supplement the power you are making with quite literally free power once they're placed, the other factor is that thermal generators have an energy efficiency of 80% of whatever is put into it
2) are you able to have smelters make energetic graphite? if so have the coal get processed into that then have it go to the thermal generators because they have a higher energy amount compared to basic coal. coal has an energy value of 2.7 MJ while Energetic graphite has an energy value of 6.3 which is more than double the energy value since it requires two coal to make one energetic graphite.
Is the coal going into your thermal generator completely stopped? or does it start stop start stop? on my setup the conveyor is stopped but the thermal generators sorter grabs a piece of coal every 15-20 seconds. I have one mining machine, feeding into one storage and that one storage feeds coal into four thermal generators. My power is always at 100% but the coal count never goes higher than 10 even though a thermal generator can hold up to a full stack of 100 coal.
This is a very basic idea setup I came up with for coal power. It only stops when generators are full, then grabs more when the stack on the generators drop below 10. I've even set the generators to be in series of each other. I use the storage as a buffer just in case I want to rearrange it later.
