The point is, that having a co-op is a feature, not something that is forced upon the users. You don't have to play co-op. It's there for the people who want to play it with friends.
And no, it doesn't take much to code a multiplayer - programming is already online, and since it's Unity, the availability is pretty much plug-and-play.
And yes, it can be very easily smoothed out, it doesn't take much to optimise (MUCH less than the base game already needs).
I believe they just haven't really thought about it.
And with that statement, you have just demonstrated that you literally have NO experience with or knowing how programming works, even less so with multi-client parallelism, or even how game development works as a whole.
Even moreso your ability (or lack thereof) to learn from past mistakes - as you clearly haven't experienced or have too quickly forgotten other games with shoehorned and otherwise haphazard and poorly implemented multiplayer functions slapped in after the main game has been developed and a very vocal minority screams 'Gimme!' for a feature they know nothing about.
Most games can be, have been, and will continue to be absolutely amazing, even without multiplayer ever being implemented.
Sadly this game NEEDS multiplayer, this game is so damn good to play with other players it just boggle my mind why they didn't include multiplayer. Same as gold rush. That game would be 500% more fun to play with friends.
So you say they are small team. Well factorio started very poorly with just 2 people and it wasn't selling well, they almost gave away that game for free. But the factory genre took off thanks to them and they skyrocketed and increased their team size a lot and made multiplayer and insane optimizations.
I believe this game can match it and overtake it. I'm sure they will hire talented people because this game must sell like hotcakes just based on user rating.
The game to run well, must be designed with multiplayer from the beginning, or it will always have problems.
Want multiplayer, go and play factorio, which I hate. Leave this single player game, single player.
