Inventory sorting option

Love the game, but as nurotic we all are, playing this game, it would be just great if there is a sorting button for my inventory. This way my OCD brain will be very happy.

There is.
To clearly say, there are two ways.

1.) the button left of the close button sorts your inventory.
2.) CRTL-Leftclick on an empty space (when only the inventory is open) sorts also.

The button doesn't always appear in the interface. When you have another inventory open (at least one of them, but I don't remember which one) the button is not available. To be sure of getting the button to sort, just open your own inventory.

Only happens when you're interacting with something that you can feed directly from your inventory (assemblers, smelters, etc). If it's storage box or just ordinary inventory opening, it'll show up

Lol don't you just love it when you realise the developers had already thought of that and solved the problem before you realised there was a solution. To be fair it's not very easy to find. I only discovered it after watching a youtube vid.

Is there a way to set it so that the inventory is always sorted? Why do I have to click the sort button over and over and over again?

You can install the modification "DSPAutoSorter"

I haven't installed any mods yet, but in Factorio I had tons of QOL mods like light during the night and such.
