If I had to pick one I'd go ken but really just because he can afford to make mistakes a little more.
Ken has better corner carry, longer ranged pokes, more health.
There are more differences but I think these are the main ones.
Ken is easier to win with at lower levels and is still strong at high level. He is great at maintaining a neutral presence and pushing opponents to the corner to start his strike/throw game. Simplistic game plan but a strong one and getting good at that may be less overwhelming.
Akuma is more for the lab monster. Many option for combos routing into side switch, setups, damage, corner carry. His fireball game is very strong for lame play and the jump fireball can be a good approach too against predictable grounded options. Stubbier buttons overall but many more ways to engage.
The only thing akuma has going for him is walk speed and a great fireball. Outside of that ken is objectively better at everything else. Also akumas damage is way below average mid screen. He depends on hitting S.hk which literally no one past like 1600 mr throws out since yoy will eat over half your life if it's ducked or di'ed
