always had a gut punch after the uppercut? I know Shin-sho has the initial gut punch and then you get that beautiful Jaw breaker but has he always transitioned the uppercut into a another final gut punch as he's rising?

nope. Ryu punches the jaw and quickly his arm teleport into the opponents gut as he's ascending in the animation.

Just looked at it again, seems Ryu adds a knee to the gut near the end.
