2) 5 did not have "unlockable" characters, definitely not on launch, they were all DLC characters. You can however unlock them for free with Fight Money which was neat but not a thing anymore in 6.
There aren't many SF games that actually have unlockable characters. The original home release of SF4 did it but people complained about it so in later releases of SF4 and eventually SF5 all characters were unlocked by default.
The only other SF games I can think of off the top of my head that had unlockable characters were Alpha 3 and the EX games.
Most modern fighting games don't really have unlockable characters due to the demand of so many people wanting to be able to play the characters from the start.
If you're someone who only cares about online and versus matches you're not going to want to have to spend a bunch of time going through arcade mode or whatever to unlock characters. That's why so many modern fighting games don't have unlockable characters.
That's you and not everybody.
Over time more and more players have said they want all the characters unlocked from the start and developers started listening to those players because they represent a larger number than those like yourself that want to unlock characters.
The original home release of SF4 had unlockable characters. Future versions of SF4 like Super SF4 and SF4 Arcade Edition did not have unlockable characters. All the characters were unlocked from the start because so many people complained about having to unlock characters in the original SF4.
First off, what are you talking about? What does that have to do with unlocking characters?
Second, no SF5 did not videos and cutscenes for each character.
SF5 had a cutscene-heavy story mode where you switch off between characters similar to the recent Mortal Kombat games.
The character specific stories in SF5 used 2D artwork to stories.
