How to Deal with a Zangief on Modern Controls?
Grapplers in general are intimidating to me, because I'm still a newbie and specially if your main lacks any zoning tools like fireballs for example.

I'm not complaining about the Modern control scheme. I think it's really cool that a whole new bunch of people gets to enjoy the game. I'm really bad too, so I understand it's also about me practicing and improving and grinding. Which is what I will do.

But, with that said, it is a bit discouraging to encounter a novice just like me who is able to drain all of my health with just 3 moves that are pretty much one button inputs. How can I approach that situation?

Step one: pick Guile, Dee Jay, or JP and stay at mid/long range. Step two: there is no step two. Now Manon I can't help you with, she straight-up needs a nerf.

Rushdown versus grappler is definitely going to be a very tough matchup for a while. All you can really do in that case is learn the timing on jumping his grabs.

Zangief shouldn't get a single button press SPD and if he does...the damage should be like 5%. Walking 720s with the press of a button really is broken. It can be done conventionally, but it takes serious devotion with Zangief.

Everything else modernized? Whatever. That? ♥♥♥♥ off, Capcom.

The T.O.s should just ban modern control Zangief if Capcom won't address it because seriously...broken.

I really can not be mad a it. With practice I believe we would be able to find weakspots. But I agree, it is a bit unbalanced.

One of the best things you can do is go into Training Mode and have Gief as the Dummy character. Go through Gief's movelist (So you can learn it) so you can use the Recording Feature in Training Mode to practice against the moves that are giving you the most trouble.

Then you can try out Jaime's different moves against Giefs, and see which ones work better for dealing/punishing Giefs problematic moves.

Also keep in mind that the damage of Special Moves in Modern Controls are reduced. So Gief's SPD's do less damage compared to the Classic version. On top of that SPD's have massive recovery if they miss. So just remember that if you sense you're about to get grabbed be sure to jump and punish the whiffed SPD. And you can't get grabbed if you're in the middle of Block or Hitstun.

If they're grabbing on wakeup, reversals will beat it (DP, super).
If they're tick-throwing you, you can fuzzy jump as option select (hold back or down-back then tap jump. the jump won't come out if you get put in blockstun. it will come out if they don't continue the blockstring).
If they start staggering their normals to catch the jumps, you can jab to "check" them.

A lot of fighting game interactions are rock-paper-scissors with back and forth conditioning. The single most impactful thing you can do to increase consistency and results, imo, is to optimize your combos and setups. That way, you don't really have to consider what your opponent is going to do as you give them few chances to take a turn. Hope this helps.

A freshie with modern on gief will be difficult for some players. The truth though classic giefs will feel the same, if not worse depending on rank.

When you make controls easier down low when the defense is terrible, you'll have these issues. Catch-22 makes the game more challenging by making it easier.
