Make sure you want the ultimate edition content which is the DLC character pass, 2 costume packs and 2 stages plus some in-game currency (not the premium one).
If you want the game + dlc characters only then get the deluxe edition and if you just want the game, standard is for you. The game is going to have paid battle passes so might as well wait and see how bad they are before you go all in.
There is a traditional arcade mode and also a separate single player World Tour mode where you make your own character and upgrade them RPG style in a semi-open world.
