Technically it should be possible to play in offline mode, but it's also possible that steam will want to check if it's really you and will want you to login during your vacation.
I would just download the cracked version before your vacation. It's not stealing since you bought the game and it makes playing offline way easier.
Yes, that works because you were connected already. Now turn off your computer, restart and don't plug the cable back in. Does it still work?

Btw, you are able to resume cos you were already logged in before. Idk how you did it though.
(if it works at all) and you continue to play offline you will eventually be unable to play due to the DRM requiring verification with its online component. How often the DRM does that depends entirely on the publisher. In Monster Hunter you could get lucky and get to play offline for 1 or 2 weeks.
Fun fact, if they decide to discontinue the DRM service for any reason without removing the DRM ingame you never get to play again (games for windows live says hi).
DRM is great for consumers btw
You can buy a few new games and a lot of older ones on GOG and download their offline installers if you want actual offline gameplay. Most of those games dont have multiplayer tho.
