Theoretically, a "smart" Ogryn is slightly smarter than your average guardsman conscripted as a peasant from an Agri-World, they can count on their fingers and understand orders SLIGHTLY more complex than "move here and shoot there".
The smartest Ogryn in 40k has been Nork Deddog, he could write his own name, count to four, did not have trouble coherently speaking, and did not spend minutes interpreting the orders. Smartest Ogryn that is physically possible would be equivalent of a school dropout 12 years old with ADHD.
Ogryns in Darktide are pretty close to "Smart" Ogryn, but you still can hear them either have memory issues (Brawler), have trouble coherently speaking (Bodyguard), fail to count their fingers in Valkyrie during mission loading, have extremely simplistic almost instinctual behavior (Thug). So they are way below Nork, but smart enough to be believable player characters considering they get orders by Vox and should be able to follow orders from any NPC that issues them during the mission.
Fortunately we have books and lore that say otherwise, and the best example is Cassia, an Ogryn who serves Lord Inquisitor Falx, of the Ordo Xenos. She keeps memoirs that are at such a high writing level, a regular human has to ask what the bigger words mean lol. She's even trained to be the inquisitor's successor.
