I like push attack -> heavy -> light -> light. Gives you 4 pretty good cleaving attacks.
You can also just do heavy -> light over and over if you aren't being overwhelmed.
Eviscerators also seem to come into their own when they start getting blessings that add CC
and improved cleave to your strikes. IIRC My eviscerator has a blessing adds +2 cleave on a kill, so the first swing kills 1, adds 2 cleave power allowing it to cleave 5 instead of 3 on the next strike. But right now we're stuck praying to RNG whilst the crafting system is being completed so i appreciate that's not really a complete answer/solution for you.
Moving from a thunder hammer that always "cleaves" on a heavy strike to a weapon that needs to cleave, but doesn't always, is admittedly a bother. But the pros of the eviscerator are really your improved movement. Your dodges go from 2 to 4, you dodge twice as far and your sprint is more efficient. So you don't want to stand at a choke point swinging half charged heavy strikes, you want to be doing the "traditional" melee dance all the other weapons do, despite it being a 2 handed weapon that implies similar mechanics to the hammer/crusher.

Many other weapons have variants, but there's only one Eviscerator type: the Tigris Mk II.
First one blocks, staggers them and does a quick side slash, the Charged strike/Heavy followup does a clearout.
