Elites are mobs+
Bosses are classified as monstrosity
Gunners, maulers, crushers, bulwarks are elites.
Bosses are bosses. If you are asking about armor class, then I suggest checking out this thread: https://www.reddit.com/r/DarkTide/comments/z2pn4t/enemy_breed_armour_types_and_locational_damage/
makes sense, I'll accept that as fact
Mauler, Gunner, Shotgunner, Ogryns, Berserkers are elites
Sniper, Pox Burster, Flamer, Pox Hound, Trapper, Mutant, Bomber are specialists
If you go to the Psykanium all the specialists are bundled together. Everything else you can mark there is elite.
Ogryns and bosses also count as unyielding.
Bottom line:
Anything that is not boss or specialist but can be marked are elites.
Elites:
Crusher
Bulwark
Reaper
Dreg Gunner
Dreg SHotgunner
Dreg Rager
Scab GUnner
Scab SHotgunner

Specialists are mobs that don't act like basic mobs. Flamers, bombers, netters, snipers fall here.
Monstrosities can be summed as 'anything with a hp bar at the top of the screen'
Special spawn with a sound cue (normally) and can't be found just standing around with other enemies
