Does the armor type of Plague Ogryns, and Beast of Nurgles count as Unyielding or Infested?
What armor type do Daemon host have? Unyielding or something else?

Since assassination missions also count the boss at the end as a monstrosity, what type of armor do they have? Im assuming flak?

Monsters have "unyielding" armor value, this includes Daemonhost. It doesn't say which armor the Captain has, but I would assume Carapace. Not sure. He tanky though for having the same amount of HP as monsters.

The Monstrosities all have Unyielding armor type and the assassination target has all flak armor.
Assassination boss also has a unique armor type, Voidshield that no weapon currently has a bonus against.
Also since Unyielding is a resistant type Rending/Brittleness can buff a lot of weapons. Like if you have a team full of lasgun/autoguns, they will absolutely pulp a beast of nurgle after you hit it with brittleness.

Scab captain has a special 'void shield' damage type while his shield is up.

After you break his shield, he has 'flak armor' as a damage type.

unyielding is not an armor type, and brittleness does nothing against it.

how does one make a non armour more brittle
Where does either blessing say armor? They lower the resistance that those enemy types have to damage. They don't have as wide a resistance to attacks, so whether or not it actually has a benefit is weapon specific, but what I said is true. Even Infested can reduce damage. Which is what Rending and Brittleness do, bring you X% closer to doing 100% damage.
