What actually triggers demonhosts?
I've seen no clear consensus; I only know not to damage or flash lights at it, does anything else trigger?

Walking to close also triggers them. I not sure if shooting things close to them does so as well but I think it have happened, or someone in my team thought I was shooting at the demonhost and started blasting.

Anything other than staying the ♥♥♥♥ away.

I've ran directly past them many times without having any consequences

I genuinely think looking at it for too long is an influence.

A couple of times ive seen people get a little close, then back up (without apparently triggering it) but after backing up they kept looking at it and then after several more seconds it triggered. But then other times I've seen people run RIGHT passed it and not set it off (but that could always have been some server error or something)
additionally: If you shoot enemies near it, it will wake up. If you shoot something near it again, it will attack.

That pretty much covers it. Getting close, shining a light on it, and damaging it in some way. I had a barrel explode next to one and triggered it.

Wouldn't want to shoot too close, especially with explosives. Even a bolter will likely trigger it, since it does an AoE stagger and some splash damage.

Try effing around. You'll find out pretty quick.

Shooting it, splash damage on it, impart stagger, getting too close, flashlights will all cause a seated daemonhost to 'wake up' wherein you have a ~five second grace period to get the ♥♥♥♥ away and stop offending it. If the time passes and you continue to do so, it will attack, and each daemonhost only has one 'grace period' baked into it.

but opening chests even remotely close to it somehow is a hard trigger also?

I shot it 2 times by accident but it didn't attack us but became angry.

Guess it has some kind of stages of mental disorder. You can tilt it by attacking or moving too close

Shooting and walking close to them.
